Anyone else stressing over writing a letter to their old employer... not sure if it's legit?

I’m trying to write this letter to my former employer, but I’m honestly not sure if I’m doing it right legally. I’ve been chatting with a lawyer’s assistant, but it still feels like I might be missing something. Has anyone been in this situation before? How did you make sure your letter was legally sound?
