This is the exhaust vent for the oven. Over time, your food can off-gas, which contributes to this issue, but a dirty oven is usually the main cause. This range is commercial style, and it’s best to have a stainless backsplash to avoid discoloration.
I was going to say that using quartz, which isn’t heat-resistant, near this exhaust isn’t a good idea. It’s better to replace it with stainless steel or something like Dekton.
Using large pots on the back burners at high heat can cause similar discoloration or even cracking if it gets too hot. I wouldn’t recommend stone or glass backsplashes.
This is definitely linked to how it was installed.
Some of the stains could be from factory oils that need to be burned off before you start using it. A stainless steel backsplash is a good idea, and you might want to consider a stainless steel wall cover since this range has powerful burners that can affect the wall. It seems like your vent hood is higher than the manufacturer recommends. Make sure to turn on the vent hood 5 to 10 minutes before using the burners and oven to help pull up steam and smoke right away.
Bluestar is right. This is normal operation. The exhaust fan for the oven and its vent track go out through that part of the rear island trim. The cuts in this trim are just for appearance; it doesn’t exhaust through the whole thing, which is why it’s isolated. Your oven burns natural gas to cook food, so the air in the oven will have condensation and off-gasses even if you’re not cooking something greasy. That’s not grease; it’s wear from heat and humidity.

Avoid a full-height quartz backsplash behind a slide-in gas range, especially not one as powerful as this.

You should turn on your vent hood 10-15 minutes before using the oven or burners. I assume your kitchen is somewhat open, and maybe you don’t use your hood much.

To prevent further damage and cover the current damage, consider buying a high backguard accessory for your range. It may hide your expensive stone, but at least it will stop the damage.
Did you really wipe cornmeal into a hot oven? That’s the vent for the oven.
